The ingredients needed to make Coconut Roll:
  1. Get 1 cup milk powder
  2. Take 1 cup grated coconut
  3. Get 1/4 cup powdered sugar
  4. Make ready 1/2 tsp elachi powder
  5. Get As required Crushed pista
  6. Take Few drops Pink food colour

Roll up tightly and pinch dough edges to seal. A plain roll that is delightful on its own and a variation with a sugary coconut filling, kind of like a cinnamon roll, except without the cinnamon. You can easily make your batch half and half and decide which one you like best. Growing up in Trinidad we didn't buy much candies.

Instructions to make Coconut Roll:
  1. First, we have to take a bowl add milk powder, coconut, powder sugar and elaichi powder mix and knead add milk as required.
  2. Divide into two equal parts, add pink food colour in one part and mix well. Place aluminium foil, grease with ghee, flatten the dough in Rectangular shape, keep aside. Grease another aluminium foil with ghee. Flatten the dough in Rectangular shape.
  3. Place one on top of others. Remove upper aluminum foil. Roll into a cylindrical shape.
  4. Garnish with chopped pista, wrap with aluminium foil.
  5. Refrigerator for 1 hour. After one hr.remove the foil. Cut in slices. Ready our yummy Coconut Roll.

It just wasn't in our family's budget to get expensive candies. One thing I remember growing up there is the number of sweets my mom used to bake for us every week. Have you ever had the "Crispy Coconut Rolls" they sell at Costco? They're made in Thailand by a company called Tropical Fields and they're delicious. Turns out, they're a popular snack in Thailand called tong muan and they're really easy to make.
