- In a large bowl, beat the margarine/butter with sugar until pale and well mixed
- Add the eggs slowly, one at a time, as you continue beating the butter- sugar mixture
- Add half of the melted chocolate into the mixture and gently mix using a mwiko preferably (keep the other half for the wet ingredients)
- Sift the flour and cocoa powder powder together. Then alternatively add in the flour and the milk to the previous mixture starting with the flour and ending with the flour. Mix gently with every addition.
- Add in the coffee (coffee is added to enhance the chocolate flavor) gently and steadily, add the other half of the melted chocolate, the mint essence and vanilla essence. Be careful not to over beat the cake batter.
- Put the cake batter into your prepared baking tin or sufuria and bake for 45 minutes or until toothpick or knife comes out clear. Let it cool completely.
- For the icing glaze, mix the icing sugar and the lemon juice and whisk until soft and well blended. Add in the zest for extra zing😋😋
- After cake cooling, pour the icing glaze in preferred fashion over the cake and decorate with the skittles as desired.
